My Mom has been making these pancakes for our family for years. It’s not her original recipe but it might as well be since I’ve never had these anywhere since. I did get her permission to post this and I hope you enjoy this family favorite as much as we have over the past bazillion years!

LIGHT AND FLUFFY PANCAKE

 

3  Eggs,separated

1 tsp baking soda

1 2/3 cup buttermilk

1 ½ cup sifted flour

1 Tbp sugar

1  tsp baking powder

½  tsp salt

3 Tbs softened butter

 

Separate three eggs, beat egg whites till stiff and let sit.

Beat egg yolks well with mixer.

Add baking soda to buttermilk and beat into egg yolks.

Sift together the flour, sugar, baking powder and salt and then beat into yolk mixture.

Beat in the softened butter.

Gently fold in beaten egg whites.

 

Bake on hot griddle.  My husband absolutely loves these.
